Soft Cocoa Biscotti

I present to you some very soft cocoa biscotti filled with orange marmalade. These cookies melt in your mouth; the contrast between the cocoa and the marmalade makes these biscotti truly delicious. Of course, you can decide to fill them differently, but I assure you that if you try this combination, it will win you over. You need very few ingredients and in 5 minutes you will have a perfect dough that can be rolled out between two sheets of parchment paper to avoid using extra flour, then just fill, roll, and bake. Before cutting and shaping the cocoa biscotti, it is important to let them cool completely to prevent the biscuit loaf from crumbling during cutting. The dough is very soft but workable. Ingredients

  • 1 3/4 cups all-purpose flour (I use spelt)
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup powdered sugar
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 2 tsp baking powder
  • to taste orange marmalade (Or other)

Steps

  • In a bowl, sift the flour, unsweetened cocoa powder, and powdered sugar, and mix. Add the oil and then the milk; once these last two ingredients are combined, add the egg and the sifted baking powder. Knead with your hands until you create a soft yet homogeneous dough.

  • Divide the dough in two and begin to roll it out with the help of a rolling pin between two sheets of parchment paper. Trim the edges to create a rectangle, and place marmalade or your preferred filling in the center. Using the parchment paper, start folding the dough inward; it will take about two folds to create the loaf. With the remaining dough, create two more loaves. You decide the size of the loaves; make them as you prefer, even shorter, as long as the dough is not too thick—they should be a maximum of two folds. Bake in a preheated static oven at 350 degrees Fahrenheit for 20 minutes in the middle part of the oven.

  • Let the loaves cool completely, and with a knife, create the biscotti. The cocoa biscotti filled with marmalade are ready to be enjoyed.
