Ingredients for Soft Coffee Biscuits

  • 2 1/2 cups all-purpose flour (I use spelt)
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/3 cup coffee
  • 1 teaspoon baking powder
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/3 cup vegetable oil

Steps for Soft Coffee Biscuits

  • In a bowl, mix the egg with the sugar, then add the water, oil, and lukewarm coffee, and mix well until you obtain a fluid and flavorful mixture. Then, start adding the flour and baking powder gradually, mixing carefully to avoid lumps.

    Since the dough will be very soft, creamy, and almost fluid, there is no need to get your hands dirty or work it on the countertop; simply continue mixing with a spoon until you reach a homogeneous consistency, perfect to be portioned directly onto the baking sheet with ease.

  • Line a baking sheet with parchment paper and, using a spoon, create small mounds well spaced from each other to allow enough room during rising.

    Bake at 355°F in a preheated static oven for 15 minutes, allowing the cookies to rise and become fluffy.
