Soft coffee cookies are delightful soft cookies. They are very quick to prepare, you won’t even need to use cutters, just a spoon to create the cookies. Ideal for breakfast, a snack, or after a meal. Soft coffee cookies will win you over with their simplicity.

Ingredients
- 2 1/2 cups all-purpose flour (I use spelt)
- 7 tbsp water
- 1/2 cup granulated sugar
- 1 1/2 oz coffee
- 1 tsp baking powder
- 1/2 cup granulated sugar
- 1 egg
- 1/3 cup vegetable oil
Steps
In a bowl, work the egg with the sugar, add water, oil, and coffee, and mix well. Start adding the flour and baking powder gradually; the dough will be very soft.
Line a baking tray with parchment paper and with the help of a spoon, create small mounds well-spaced apart. Bake in a preheated static oven at 350°F for 15 minutes.
The coffee cookies are ready.
