Soft Cookies with Jam

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 egg
  • 3 1/2 tbsp milk
  • 3 1/2 tbsp extra virgin olive oil
  • 2 tsp baking powder

Steps

  • In a bowl, pour the flour, add the sugar, oil, milk, eggs, and baking powder, mix well gradually incorporating the sifted flour.

  • Pour everything onto a lightly floured surface and knead the dough with your hands until you get a nice smooth, soft and homogeneous dough, wrap the obtained dough with plastic wrap and place it in the fridge for 30 minutes.

    After this time, take the dough and roll it out directly on parchment paper, add more flour if necessary.

  • At this point, place the jam well spaced, as shown in the picture.

    Take the dough from one side and fold it over.

    Cut out the cookies with a cutter or a glass, it will be easy to see where to place the cutter to cut out the cookie.

    Seal the edges well by pressing them lightly, and bake at 356 degrees Fahrenheit in a preheated static oven for about 15-20 minutes.

  • Let them cool completely.

    The jam cookies are ready to be enjoyed.
