Soft Filled Cookies

Delicious and soft cookies filled with jam. I’ll tell you right away that to prepare these treats you don’t need any cookie cutters. Just prepare the dough, let it rest for an hour in the fridge, then roll it out with a rolling pin, fill it, cover it with more dough, and bake. In my family, we go crazy for these tasty cookies. Ingredients

I used type 1 flour, if you prefer, you can use another type of flour, just remember that each flour absorbs liquids differently, so the dough might need more or less flour. The dough should be soft and not sticky.

  • 2 1/2 cups Flour (I used type 1 flour)
  • 2/5 cup Granulated sugar
  • 7 tbsps Butter
  • 2 eggs
  • 2 tsps Baking powder
  • Jam (Jam or hazelnut cream)

Steps

  • In a bowl, work the eggs with the sugar, also add the softened butter.

    Also add the flour and the pre-sifted baking powder, work all the ingredients until you get a soft and homogeneous dough, if necessary, add more flour.

    Wrap the dough in plastic wrap and place in the fridge for at least an hour.

  • After the resting time, take the dough and divide it in half.

    Roll out the first part into a rectangle 14 inches long and 10 inches wide, spread and level your chosen jam on top, roll out the second dough and gently place it over the jam.

    Trim and press the edges well to seal, create small balls with leftover dough and place on top. With the help of a knife, make marks on the surface to form squares. (See photo)

    Bake at 356°F in a preheated static oven for 20 minutes.

  • Let cool for five minutes and then cut with a knife to make the cookies.
