Soft Flatbreads

Soft, soft flatbreads. At my house, they are a real hit, everyone loves them, especially my little nephew, a true connoisseur of flatbreads. Perfect also for a buffet, you can make them large or small depending on your needs. They can be topped with olives, cherry tomatoes, sausages, or left plain and topped with a sprinkle of salt. Ingredients for Soft Flatbreads

With these quantities, I made 9 large flatbreads 4 inches in diameter and 11 small flatbreads the diameter of a glass (2.5 inches).

  • 3 1/4 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1/2 cup water
  • 1/2 cup milk
  • 3 1/2 tbsp extra virgin olive oil
  • 1 tbsp granulated sugar
  • 1 1/2 tsp fine salt

Steps for Soft Flatbreads

  • In a bowl, pour the flour, sugar, and yeast, and mix well. Add the water, oil, and milk.
    The salt should be added only after the liquids have been incorporated. Mix well until you create a smooth and non-sticky dough; if necessary, you can add a bit more flour.
    Place the dough inside a bowl, cover with plastic wrap, and let it rise for two hours.

  • After the rising time has passed, place the risen dough on a floured surface, work quickly, and then roll it out with a rolling pin. The thickness should be less than 1/5 inch approximately.
    Place the obtained flatbreads on a baking sheet lined with parchment paper. If you decide to top the flatbreads with olives and sausages, place them on top, pressing lightly with your fingers.

    Cover with plastic wrap and let rise for another hour.

  • After this time has passed, if you decided not to top them, use your fingers to create holes on the surface and add a sprinkle of fine salt.
    For those with toppings, press the olives or whatever you decided to use into the dough to make them sink well.

    Bake at 356°F in a preheated static oven for 15 minutes, after 7 minutes switch the trays for even cooking.
