Soft Orange Cookies from Ribera: Scent of Sicily
When the good oranges from my land arrive, directly from Ribera (Sicily), the first thing I do is prepare a nice orange salad and immediately after, make these fantastic cookies!
These treats are very fragrant, incredibly soft, and will win anyone over with the first bite. If you love citrus and soft textures, you absolutely must try them. Their intense flavor will immediately transport you under the Sicilian sun.

Ingredients for Soft Orange Cookies

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 7 tbsp vegetable oil
  • 1/2 cup orange juice and grated zest (1 large orange)
  • 1 egg
  • 1 tsp baking powder

Steps for Soft Orange Cookies

  • In a bowl, mix the sugar with the grated zest of an orange (untreated). The more you work these two ingredients, the more intense the aroma of the orange will be.
    Add the egg and vegetable oil and mix well with a fork to combine. Add the filtered orange juice.
    Start incorporating the flour little by little along with the baking powder, previously sifted. Mix until you get a soft dough.
    Using two spoons, start placing dollops of dough well spaced apart on a baking sheet lined with parchment paper.
    Slightly dampen your hands and gently press the surface of each cookie to flatten them slightly.

  • Bake in a static oven already preheated to 350°F and bake for about 18 minutes. Do not overcook to keep the cookies soft.
    Remove from oven and let the cookies cool completely. If desired, sprinkle with plenty of powdered sugar before serving.
