Ingredients for Soft Ricotta Cookies without Eggs

I used all-purpose flour, but you can use the flour of your choice. Just remember that different flours absorb moisture differently, so you might need to add more flour or some tablespoons of water. This dough should be very soft and not sticky.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Ricotta
  • 1/4 cup Granulated sugar
  • 1 teaspoon baking powder
  • 1/4 cup Vegetable oil
  • 3 tablespoons chocolate chips

Steps for Soft Ricotta Cookies without Eggs

  • In a bowl, mix the sugar with the ricotta and then also add the oil.

    Take small pieces of dough and gently shape them with the palm of your hands.

    Also pour in the flour and the teaspoon of baking powder previously sifted.

    Once the ingredients are all combined, add the chocolate chips, mix well and create a dough ball.

    Once the dough ball is created, take small portions of dough to create balls and flatten them slightly with the palm of your hands. If you want, you can make a hole in the center to form pretty donuts.

  • Bake at 338 degrees Fahrenheit in a preheated static oven for 13/15 minutes in the middle of the oven. After 13 minutes, check if they are golden on the surface and the base. The cookies are ready.
