It’s a versatile dough with a soft and delicious texture, perfect for soft cookies and super delicious tarts. It’s a different kind of shortcrust pastry because it stays soft once baked.
Ideal for tarts and cookies, it takes just 5 minutes to prepare and does not require resting because it contains oil instead of butter. It’s a light dough, easy to work with and roll out. With this soft shortcrust pastry, you will create truly amazing tarts and cookies.

Ingredients for Soft Shortcrust Pastry

With these ingredients, you can make about 25 filled cookies (double, one on top of the other) or a tart of 8-9 inches in diameter.

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup milk (Warm)
  • 1 tbsp baking powder
  • 1 pinch salt

Steps for Soft Shortcrust Pastry

  • In a bowl, mix the flour, baking powder, and powdered sugar.
    Gradually add the warm milk and a pinch of salt. Then add the oil.
    At this point, also add the egg.
    Start kneading with your hands.
    Place the dough on a floured surface and work it until you create a soft and homogeneous dough.

  • Roll out the pastry fairly thinly on a floured surface.
    Now, get creative crafting cookies or a tart!

    Baking Times:
    Bake in a preheated static oven at 350°F.
    Tart: Bake for about 25 minutes. The time may vary depending on the filling.
    Cookies: Bake for about 15 minutes.
