Soft Shortcrust Pastry

The soft shortcrust pastry was my breakthrough: everyone at home goes crazy for it!
It’s a versatile dough with a soft and delicious texture, perfect for tender cookies and super-delicious tarts. It’s a different shortcrust pastry because once baked it remains soft.
Ideal for tarts and cookies, it’s ready in just 5 minutes and doesn’t need resting because it uses oil instead of butter. It’s a light dough, easy to work and to roll out. With this soft shortcrust pastry, you’ll make tarts and little cookies that are truly surprising.

Ingredients for the soft shortcrust pastry

With these ingredients you can make about 25 filled cookies (sandwich-style) or a tart about 8–8 2/3 inches in diameter.

For this recipe I used type 0 flour. My advice is to start from a base of 2 cups of flour (about 250 g), because you can always add a little more later if necessary.

Remember that every flour absorbs liquids differently, so adjust carefully: the final dough should be smooth, soft and absolutely not sticky, so you can roll it out easily.

  • 2 cups type 0 flour
  • 1/2 cup powdered sugar
  • 1 egg
  • 3 1/3 tbsp vegetable oil
  • 3 1/3 tbsp milk (Warm)
  • 2 tsp baking powder
  • 1 pinch salt

Steps for the soft shortcrust pastry

  • In a bowl, combine the flour, baking powder and powdered sugar.
    Add gradually the warm milk and a pinch of salt. Then add the oil.
    At this point, add the egg too.
    Start kneading with your hands.
    Turn the dough out onto a floured surface and work it until you form a soft and homogeneous dough ball.

  • Roll out the pastry fairly thinly on a floured surface.
    Now, have fun creating cookies or a tart!

    Cooking Times:
    Bake in a preheated conventional oven at 356°F.
    Tart: Bake for about 25 minutes. Time may vary depending on the filling.
    Cookies: Bake for about 15 minutes.
