Soft Strawberry Cookies

Soft strawberry cookies that are very easy to make. It only takes five minutes to prepare the dough for these delicious cookies. The strawberries inserted into the dough make these treats really soft and exquisite. I used an oil-based shortcrust pastry that contains only the necessary ingredients. Ingredients

  • 1 1/4 cups all-purpose flour (+ 2 tablespoons)
  • 3 tbsp granulated sugar
  • 1 egg
  • Half lemon (Juice only)
  • 3 tbsp vegetable oil
  • 1 tsp baking powder
  • 3/4 cup strawberries

Steps

  • Wash the strawberries dry and cut into small pieces and place in a bowl with half the lemon juice mix and set aside.

    In a bowl, work the egg with the sugar and then add the vegetable oil.

    Start pouring in the flour with the previously sifted baking powder.

    At this point add the strawberries and the two tablespoons of flour and mix well.

    With the help of two teaspoons start to form small heaps well spaced from each other and place them on a baking sheet lined with parchment paper.

  • Bake at 356 degrees in a preheated static oven for 13-15 minutes maximum.
