Soft Yogurt Cookies.
Soft and delicate, these yogurt cookies are the perfect choice to enjoy for breakfast or any time of the day.
Their unique texture, reminiscent of bread rolls, makes them particularly soft and inviting. They are very easy to make and incredibly tasty.
To make them even more delicious, I enriched the dough with chocolate chips, but if you prefer, you can leave them plain or add dried or fresh fruit. Come with me, let’s start baking right away.
Happy cooking, Giusi.

Ingredients for Soft Yogurt Cookies
- 2 cups flour (I used type 1 flour)
- 1 egg
- 2/3 cup Greek yogurt (or regular)
- 2 tsp baking powder
- 1/4 cup granulated sugar
- 1/4 cup vegetable oil
- to taste chocolate chips
Steps for Soft Yogurt Cookies
In a large bowl, mix the sugar with the egg. Add the yogurt and oil and mix well until combined.
Sift and add the flour and baking powder.
Mix all the ingredients with a spatula or spoon. If desired, now is the time to add chocolate chips (or other fillings).
Continue to mix the dough until all ingredients are well incorporated. Don’t worry, the dough will be very sticky and that is perfectly normal.
To form the cookies, use two spoons or slightly moisten your hands. Create balls (or portions) and place them on a baking tray lined with parchment paper.
Bake in a preheated static oven at 350°F for about 20 minutes, or until golden.
The soft yogurt cookies are ready to be enjoyed.

Storage
Once completely cooled, the cookies can be stored at room temperature for about 3-4 days.
To keep them soft for longer, store them in an airtight container or a well-sealed food bag.
