Spinach Gnocchi with Ricotta Cream

Ingredients for Spinach Gnocchi with Ricotta Cream
- 14 oz spinach gnocchi
- 1 cup Ricotta
- 1 oz Pecorino Romano
- 1 glass gnocchi cooking water
- 2.5 oz bacon
Steps for Spinach Gnocchi with Ricotta Cream
Cook the gnocchi for three minutes in plenty of salted boiling water. Once cooked, drain them and pour them into a pan with a splash of oil, keeping aside one glass of cooking water.
Meanwhile, in another pan, sauté the bacon until crispy; once ready, remove from the heat and set aside.In a bowl, mix the ricotta with cheese using a fork, add the glass of cooking water and stir well until you get a smooth consistency.
Pour the obtained cream into the pan with the gnocchi and sauté for 2-3 minutes, stirring carefully to blend all ingredients.
Plate the gnocchi coated in ricotta cream and add the crispy bacon you set aside on top.
