Today I present you soft spoon cookies. These are very quick sweets to make, you just need to mix all the ingredients and then, with a simple spoon, place small heaps on a baking sheet lined with parchment paper. In 25 minutes you’ll have cookies ready to be enjoyed. Come with me and let’s start creating.

Ingredients
- 2 1/4 cups all-purpose flour
- 2 eggs
- 2/3 cup Greek yogurt
- 1/4 cup sugar (I used raw cane sugar)
- 1/3 cup vegetable oil
- 1 tbsp baking powder
Steps
Important: Eggs and yogurt must be at room temperature. If you forgot to take them out of the fridge, just immerse the eggs in a bowl with warm water for a few minutes, and for the yogurt, just warm it for a few minutes in the microwave or on the stove.
In the bowl, work the eggs with the sugar using a whisk or a fork. Also add the oil and the yogurt.
Also pour in the flour and baking powder previously sifted and finally half of the pine nuts, mix well.
The mixture will be very thick.With the help of a spoon start to create heaps on a baking sheet lined with parchment paper well spaced apart, moisten your hand and flatten each heap.
If you like, add chocolate pieces, nuts, or whatever you prefer on the surface.
Bake at 356°F in a preheated static oven for 20 minutes in the middle of the oven.
The cookies are ready to be enjoyed.
