Ingredients for Stewed Meatballs and Potatoes
- 9 oz Ground veal
- 4 tbsp Breadcrumbs
- 1 Egg
- to taste Salt
- 5 Potatoes (about 1.5 lbs)
- 1 cup Water
Steps for Stewed Meatballs and Potatoes
Let’s start by preparing the meatball mixture: in a bowl, combine the ground meat, parsley, egg, salt, and about 3/4 tablespoons of breadcrumbs. Mix well with your hands until all the ingredients are perfectly combined.
Meanwhile, peel the potatoes and cut them into not too large chunks. Take a high-sided pan, pour a drizzle of extra virgin olive oil, and add the potatoes, browning them for a few minutes. While the potatoes gain color, shape the meatballs with your hands and place them gradually in the pan. Finally, add two glasses of warm water, season with salt, and proceed with cooking
Cook the stewed meatballs and potatoes for about 30 minutes, covering with a lid, until the potatoes are very soft. If the sauce reduces too much during cooking, you can add another splash of warm water. Once ready, serve this hot and creamy main dish.

You can store the stewed meatballs and potatoes in the fridge, in an airtight container, for up to 2 days. To consume them, just reheat them in a pan with a drizzle of water or in the microwave to make the potatoes and meat tender and juicy again.
You can dissolve a teaspoon of tomato paste in the water before pouring it into the pan, to make the sauce even tastier and more colorful. To make this main dish even richer, you can add sliced onions and peas along with the potatoes, creating a perfect vegetable mix to accompany the meatballs.
