Stewed Meatballs with Grated Potato

Stewed meatballs with grated potato inside the mixture are extremely tasty and very soft. They are quick to prepare, and the result is really amazing with very few ingredients. To make them so tender, there is a secret ingredient that, in reality, is not so secret: grated potato in the mixture! Meatballs are a great classic in my kitchen, and I like them in all ways, but this version is definitely our favorite. Few moves for a succulent dish that will conquer adults and children at the first taste.

Ingredients for Stewed Meatballs with Grated Potato

  • 1.75 lbs Veal meat (or mixed)
  • 3.5 oz bread crumb (or sandwich bread)
  • 2 medium potatoes (Grated)
  • 2 eggs
  • to taste salt
  • to taste garlic (Optional)
  • 2 tbsps Breadcrumbs
  • to taste parsley
  • 1 carrot
  • 1 white celery
  • 1 onion
  • to taste water
  • 1 tbsp Tomato paste
  • 1 tbsp cornstarch (maizena)

Steps for Stewed Meatballs with Grated Potato

  • First, soak the bread crumb, then squeeze it well after a few minutes. Start preparing the broth: cut the carrot, celery, and onion into small pieces.

    In a tall pot, add a drizzle of oil and start sautéing the aromatics. After 5 minutes, pour in the necessary water (about 4 inches from the top), salt, and heat the broth. In a bowl, combine the ground meat, bread crumb, parsley, grated potatoes, eggs, garlic, salt, and 2 tablespoons of breadcrumbs. Mix well with your hands.

  • Prepare the meatballs. Add the tomato paste to the broth. Place the meatballs into the broth and cook on low heat for about 30 minutes.

  • Take a little broth and put it in a small bowl; add a tablespoon of cornstarch, mix and pour it into the pot. Cook for another 5 minutes.

  • I recommend serving these very soft meatballs hot, accompanied by their creamy sauce and some slices of toasted bread, perfect for dipping. A final sprinkle of fresh chopped parsley will complete the dish, making it even more fragrant.
