Today I share with you this strawberry cake recipe. A recipe I am particularly fond of. It can be prepared in a few minutes, just mix all the ingredients with a hand whisk and you’re done. Ingredients
I used a 8 x 8 inch square pan but a 8-9 inch round pan will work just fine
- 2 1/2 all-purpose flour (I use spelt flour)
- 2/3 cup granulated sugar
- 2 1/2 tsp baking powder
- 2/3 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 1 lb strawberries
Steps
In a bowl, pour the baking powder, sugar, and mix. Add the eggs, milk, oil, and mix all the ingredients with a hand whisk and spatula. Cut the strawberries into small pieces and mix with a spoonful of whole cane sugar. Add the strawberries to the mixture and incorporate
Pour the mixture into a greased and floured pan or lined with parchment paper. Bake at 350°F in a preheated static oven for about 35 minutes
Let the cake cool completely in the pan. The fragrant strawberry cake is ready.
