Steps for the Super Easy Soft Cake

  • Start by beating the eggs together with the sugar using electric beaters, continuing until the volume has doubled and you have a light, pale and fluffy mixture.
    At this point, slowly add the vegetable oil and the milk in a thin stream, and stir in the vanilla extract.

    Sift the all-purpose flour and the baking powder, folding them into the rest of the ingredients little by little. Use a spatula or wooden spoon for the final steps, gently folding from the bottom up so as not to deflate the batter.
    Transfer the batter to a buttered and floured 8.7–9.4-inch (22/24 cm) diameter pan. Bake in a preheated conventional oven at 356°F (180°C) for about 35 minutes. Always check doneness with a toothpick.

    Allow the cake to cool completely before removing it from the pan.

Storage

To keep your cake fragrant for several days, follow these simple tips:

Store the cake under a glass dome or in an airtight container; this way it will stay soft for 3-4 days. If it is very warm, you can refrigerate it, remembering to leave it at room temperature for ten minutes before serving. Alternatively, you can freeze it already sliced to have a quick snack ready at any time: just put it in the oven for one minute to restore its softness.
