Super Soft Brioche Bread
Anyone who loves baked goods knows how satisfying it is to bake a sweet treat that’s so soft and fragrant! Today, I present to you my recipe for Super Soft Brioche Bread, a simple yet foolproof preparation that’s perfect for breakfast and snacks for the whole family.
Between me and this dough, it was love at first sight. Despite the long rising time, the steps are intuitive, and the final result is a cloud that melts in your mouth, staying soft for days.
This time, I chose to keep my brioche bread in its basic version without filling it inside. The beauty of this recipe is its versatility: you can fill the balls before the second rising, or bake it and slice it in the middle, filling it as you like.

Ingredients for Brioche Bread
- 2 cups all-purpose flour (or bread flour)
- 2 cups cake flour
- 2 1/4 tsp active dry yeast
- 1 egg
- 1 cup milk
- 4 tbsps butter
- 1/4 cup sugar
Steps for Preparing Brioche Bread
You can knead by hand or with a stand mixer.
In a bowl, first mix the flours and yeast. Add the egg and sugar, then the warm milk, slowly.
Knead well, then add the butter (in pieces, a little at a time). Work until you have a soft and slightly sticky dough. If needed, add a pinch of flour!
Do the folds (from the outside to the inside, all sides) and form a ball.
First Rising: Cover the bowl with plastic wrap and let rise for 3 hours (I use the oven with the light on).
Turn the dough over, make a log about 18 inches long, and divide it into 6 portions of about 5 oz each.
Take each piece, flatten, make 4 folds (outside-inside), rotate and form a smooth ball.
Arrange the balls in the mold (mine is flower-shaped) and cover.
Second Rising: let it rise for another hour.
Baking: Bake at 355°F (preheated static oven) for 30/35 minutes. Cover with parchment paper after 20 minutes to prevent the surface from burning.
