Ingredients for the Cinnamon Cake

  • 1 1/3 cups all-purpose flour (or 00)
  • 2 eggs (at room temperature)
  • 2/3 cup granulated sugar
  • 1 pinch salt
  • 7 tbsps oil
  • 6 tbsps milk (Warm)
  • 1 tsp baking powder
  • 2 teaspoons Cinnamon

I used a mold of 20 cm (8 inches) in diameter.

Steps for the Super Soft Cinnamon Cake

  • Beat the eggs with the pinch of salt for about 5 minutes using an electric mixer at maximum speed until obtaining a light and frothy mixture.
    After this time, slowly add the sugar and let the mixer work for another 5 minutes to incorporate it perfectly.
    Without stopping the mixing, first incorporate the milk and then the oil by pouring them in a thin stream.
    Finally, gradually add (little by little) the flour, the previously sifted baking powder, and the cinnamon powder, mixing gently at low speed or with a spatula until the mixture is smooth and lump-free.

  • Once the ingredients are well combined, pour the batter into a mold (recommended diameter 20/22 cm or 8/9 inches) previously buttered and floured or lined with parchment paper.
    Bake in a preheated static oven at 350°F in the middle of the oven for about 35 minutes. The time is indicative: to be sure of the cooking, always do the toothpick test. If it comes out dry, the cake is ready.
    Take the cake out of the oven and let it cool completely inside the mold before removing it.
    If you like, dust the surface with powdered sugar. Your Super Soft Cinnamon Cake is ready to enjoy!
