Vanilla Tree Cookies (with Oil Shortcrust)
Today I want to share with you these vanilla cookies, made with my oil shortcrust. They are simple treats to which I gave the cute tree shape.
These Christmas cookies are very nice to present on the holiday table, they are genuine and above all very easy to make.

Ingredients for tree-shaped cookies
I flavored the dough with vanilla, you can replace it with orange zest, lemon zest, almond flavoring, etc.
- 2 eggs
- 2/3 cup granulated sugar
- 1/3 cup vegetable oil
- 2 3/4 cups all-purpose flour (+ more as needed for dusting)
- 2 tsp baking powder
- 1 tsp vanilla extract
Steps For tree-shaped cookies
With the help of a fork, start to mix the eggs with the sugar.
Add the vanilla extract as well, then incorporate the oil.
Add the flour in batches, and finally the baking powder.
Keep kneading on a floured surface until you create a soft and non-sticky dough. (If necessary, add a bit more flour).
Divide the dough into two and start rolling it out on a floured surface into a very thin layer.
Create the shapes. To make my trees, I used a glass (the one used for water), a coffee cup, and a bottle cap for the different sizes!
Bake at 340°F in a fan oven for 7-8 minutes or at 355°F in a static oven for the same time (7-8 minutes).
Once cooled, to “glue” the cookies together and create your 3D trees, I used a delicious hazelnut cream!
