Twists with Bacon and Olives

If you love snacks, leavened doughs, and tasty rustic treats, you are in the right place. I propose these twists with bacon and olives, truly delicious and flavorful sticks, you’ll fall in love at first bite. Ideal to enjoy on their own, as an appetizer, or as a side to salads, soups, or a main course of meat or fish. They are really easy to make, just respect the rising times.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 1/2 cups re-milled durum wheat semolina flour
  • 1/2 tsp active dry yeast (Or 6 grams of fresh yeast)
  • 1 cup water
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 5 oz bacon (Cubed or sliced)
  • 3 1/2 oz olives

Steps

  • I kneaded everything with a stand mixer, but you can easily do this by hand.

    In a bowl, mix the two flours and the yeast, start adding the water slowly. After finishing with the water, also add the oil and finally the salt. Work for a few minutes until all ingredients are well combined, then add the chopped olives and bacon cubes. Incorporate these last two ingredients well, once ready, place in a well-oiled bowl, cover with plastic wrap, and let rise for at least three hours.

  • After the rising time, stretch the dough with your hands into a rectangle.

  • With the help of a knife, create strips. You can decide to leave them as is, and you’ll get sticks, or twist the ends to create twists.

  • Place the sticks or twists on a baking sheet lined with parchment paper, cover with plastic wrap, and let rise for another hour.

  • Bake in a preheated static oven at 392°F for 15 minutes, turn on the grill for the last 2 minutes.
