If you are lovers of coffee, you absolutely must try this cake! The water cake with coffee has a softness to savor. A very simple dessert, but with a strong taste thanks to the coffee.

Ingredients for the Water Cake with Coffee
- 2 1/2 cups all-purpose flour (I use spelt)
- 1/2 cup granulated sugar
- 1 egg
- 1 tbsp baking powder
- 3 oz coffee
- 1/4 cup water
- 6 1/2 tbsp vegetable oil
- 1 tbsp chocolate chips (Optional)

You can use a 20 x 20 cm (8 x 8 inches) pan or a 24 cm (9.5 inches) diameter pan.
Steps for the Water Cake with Coffee
Using a whisk, mix the sugar with the egg, add water, oil, coffee and mix well.
At this point, start adding the flour gradually and finally the baking powder, mixing the batter well.
Also add in the dark chocolate chips and mix.
The batter will be very creamy and thick, this is normal.
Pour the mixture into a pan lined with parchment paper or greased and floured.
Bake in a preheated static oven at 350°F for 30 minutes, always do the toothpick test.
Let the cake cool completely before removing it from the pan.
The coffee cake is ready.

Storage
This cake, being a dry preparation without perishable creams or fillings, keeps perfectly at room temperature.
It is advisable to store it under a cake dome or in an airtight container. This way, it will retain its softness and freshness for 4-5 days.
