Ingredients For the Yogurt and Coffee Cake
- 2 1/4 cups all-purpose flour
- 1 cup yogurt (coffee flavored)
- 1/4 cup milk
- 2 tbsps Coffee
- 1/3 cup granulated sugar
- 1/2 cup vegetable oil
- 1 tbsp baking powder
Steps For the Yogurt and Coffee Cake
In a large bowl, vigorously mix the oil with the sugar until you get a creamy mixture. Then add the milk and coffee (preferably warm) and mix again.
Also add the yogurt, sifted flour, and baking powder. Mix all the ingredients well with a spoon or a spatula until you have eliminated all the lumps.
Don’t worry if the mixture appears very thick and dense: it’s normal for this cake!
Pour the batter into a mold about 9 inches in diameter, previously greased and floured. You can also use a larger mold, but in that case, the cake will be slightly lower and will bake in less time.
Bake in a preheated static oven at 350°F for about 30-35 minutes.
Always do the toothpick test: insert it into the center of the cake, and if it comes out dry, the cake is ready.
Let the cake cool completely in the mold before removing it.
If you like, dust the surface with plenty of powdered sugar before serving.

Storage
The yogurt and coffee cake remains soft and tasty for several days. After it has completely cooled, store it under a glass dome or in an airtight container at room temperature. This way, it will stay perfect for breakfast or snacks for about 4-5 days. If there are leftovers (which I doubt!), you can also freeze it in slices, wrapped individually in plastic wrap, to have it ready when needed!
