Zucchini Stuffed with Ricotta

Ingredients

  • 2 Zucchini
  • 7 oz ricotta
  • 1 oz grated cheese
  • 1 egg
  • Breadcrumbs

Steps

  • Wash the zucchini and cut them in half lengthwise.


    Scoop them out with a spoon, then chop the pulp you’ve removed. Sauté the pulp in a pan with a drizzle of oil, garlic, and a pinch of salt for about 5 minutes.


    In a bowl, mix the ricotta, egg, cheese, salt, and cooled zucchini pulp.


    Fill the zucchini with the mixture.
    Sprinkle with breadcrumbs and a drizzle of oil, then bake at 350°F for 35 minutes.
