Ingredients

  • 1 cup ricotta
  • 1 cup mascarpone
  • 3 tbsp sugar
  • 1/3 cup chocolate chips
  • as needed lemon flavoring (optional)
  • 3 eggs
  • 1/2 cup butter (melted)
  • 2 cups Digestive biscuits
  • 6 strawberries (diced)

How to prepare the baked strawberry cheesecake

  • First, crumble the biscuits. I ground them with the Bimby for 5 seconds at speed 6.

  • Add the melted butter to the biscuits and stir with a spatula.

  • Place the biscuits inside a 20 cm springform pan, previously lined with parchment paper.

  • Press down with the back of a spoon and refrigerate for about 30 minutes.

  • In a bowl, add the ricotta, mascarpone, sugar, chocolate chips, and if you like, a few drops of lemon flavoring. Mix with a spoon.

  • Add the eggs and mix.

  • Finally, add and incorporate the diced strawberries.

  • Pour the mixture into the pan and bake in a preheated static oven at 350 degrees Fahrenheit. Let it bake for about 50 minutes. Please check the baking times based on your oven. At the end of cooking, leave the cheesecake in the turned-off oven for another 10 minutes.

  • Remove from the oven and let the cheesecake cool completely, then store it in the refrigerator until ready to serve.

  • Before serving, decorate according to your taste if you like.

  • I decorated with fresh strawberries.

The baked strawberry cheesecake can be stored in the refrigerator for 3-4 days.
