Ingredients
- 2 eggs
- 1/2 cup sugar
- 1/2 cup lactose-free milk
- 2 tbsps sunflower oil
- 1 1/2 cups gluten-free rice flour
- 1/3 cup gluten-free potato starch
- 2 tsps gluten-free baking powder
- as needed jam (flavor of choice)

- 1 Parchment paper
- 1 Aluminum baking pan
How to Make the Cake with Rice Flour and Jam
In a bowl, add the eggs and sugar. Mix with a hand whisk or an electric mixer.
Add the milk and oil. Mix.
Add the flour, starch, and baking powder. Mix everything well, being careful not to create lumps.
Pour the mixture into a 4-serving aluminum pan. Line the pan with parchment paper. To see my pan, click here.
Pour the mixture into the pan.
On the surface of the cake, add small dollops of jam using a teaspoon.
Bake in a preheated static oven at 350°F and let it cook for about 25/30 minutes. Please check the baking time according to your oven by doing the toothpick test.
Remove from the oven, let it cool slightly, and enjoy.
