This mold gives the cake a perfect shape to be filled. After about 25 minutes of baking, the cake is enriched with a delicate layer of jam and a cream based on mascarpone and cream. The cream is enhanced with a touch of pink color, used to create beautiful tufts with the pastry bag.

Of course, you can choose another color, or leave the cream in its original color.

Ingredients

For the base

  • 2 eggs
  • 3/4 cup sugar
  • 1/3 cup milk
  • 1/3 cup sunflower seed oil
  • 1 1/4 cups all-purpose flour
  • 3 tbsps unsweetened cocoa powder
  • 1 packet baking powder
  • to taste jam
  • 5.3 oz mascarpone
  • 5.3 oz whipping cream
  • to taste food coloring

How to Prepare the Cocoa Cake with Mascarpone Cream

  • In a bowl, place the eggs and sugar, and mix with an electric mixer.

  • Add the milk and oil and mix with the electric mixer.

  • Add the flour, cocoa, and baking powder. Mix well, being careful not to create lumps.

  • Pour the batter into a clever tart pan of 11 inches diameter, previously greased and floured. Bake in a static oven preheated to 350°F. Let it cook for about 20/25 minutes. Please check the cooking times based on your oven.

  • Remove from the oven, let it cool, and leave it upside down on a serving plate.

  • Spread a layer of jam (flavor of your choice) in the center of the cake and level it.

  • In a bowl, place the mascarpone, cream, and a few drops of pink food coloring. Mix with the electric mixer. Place the mixture in a pastry bag and decorate the cake by creating tufts.

  • Store the cake in the fridge until ready to serve.
