The cocoa roll with cream and strawberries is a simple and quick dessert to prepare. It is perfect to serve as a dessert at the end of a meal. The star of the recipe is the strawberries, but if you don’t like them, you can use other fruits.

To fill the roll besides the strawberries, I used cream and mascarpone.

Ingredients

For the roll

  • 4.2 oz sugar
  • 4.2 oz all-purpose flour
  • 1.8 oz unsweetened cocoa powder
  • 1 tsp baking powder
  • 4 eggs
  • 3.5 oz mascarpone cheese
  • 2 tbsp sugar
  • 7 oz whipping cream
  • as needed strawberries

  • 1 Knife

How to Prepare Cocoa Roll with Cream and Strawberries

  • In a bowl, place the eggs and sugar. Mix with an electric mixer.

  • Add the cocoa, flour, and baking powder. Mix everything well with the electric mixer.

  • Pour the obtained mixture into a baking sheet lined with parchment paper. (About 14×16 inches). Level it and bake in a preheated static oven at 355°F. Let it bake for about 10 minutes. Be sure to check the baking times based on your oven.

  • Meanwhile, prepare the filling. In a bowl, place mascarpone, sugar, and whipping cream. Mix with an electric mixer until the mixture is creamy and thick.

  • Remove from the oven and cover the dessert with a sheet of parchment paper. Flip it and remove the parchment paper used for baking.

  • Trim the edges and fill. Level it and add small pieces of strawberries.

  • Roll it up with a decisive movement. Tighten the roll with parchment paper and let it rest in the refrigerator for at least 30 minutes.

  • Before serving, cut the roll into slices and if you like, dust with powdered sugar.

  • Enjoy your meal.
