Cocoa Squares with Filling are fresh and delicious sweets. One of those classic desserts you make when you crave something sweet, but have little time available.

They are perfect for breakfast perhaps dipped in milk, for snack, or to serve as a dessert at the end of a meal.

For the filling, I used a delicious ricotta cream, definitely try them. Since they are stored in the fridge, they are perfect to consume even in the summer season.

Ingredients

For the cake

  • 2 eggs
  • 5.3 oz sugar
  • 1 cup all-purpose flour
  • 1.5 tbsp unsweetened cocoa powder
  • 3.5 tbsp sunflower oil
  • 3.5 tbsp milk
  • 1 packet baking powder
  • 1 egg
  • 8.8 oz ricotta
  • as needed sugar
  • 1.4 oz chocolate chips

  • 1 Mold
  • 1 Spoon

How to Prepare Cocoa Squares with Filling

  • In a bowl, add the eggs and sugar. Mix with an electric mixer until you get a fluffy and frothy mixture.

  • Add the oil and milk and mix.

  • Add the flour, cocoa, and baking powder. Mix well, being careful not to create lumps.

  • Pour half of the batter into a 20×20 cm (8×8 in) square mold. If you want to check out my mold, you can find it here. I recommend having a mold like this because this size is usually perfect for the air fryer.

  • Bake in a preheated, static oven at 180°C (356°F) and let it cook for about 12 minutes. In the meantime, prepare the cream.

  • In a bowl, add the egg, ricotta, and chocolate chips. Mix with a spoon. You can add sugar to taste. I added two tablespoons, but you can also omit it.

  • Remove from the oven and add the filling to the mold, level it, and cover with the remaining batter. Bake for another 35 minutes. Make sure to check the cooking times based on your oven.

  • Remove from the oven, let it cool slightly, and store in the refrigerator until ready to serve. I recommend keeping it in the fridge for at least an hour.

  • When the cake is completely cold, cut it into squares and dust with powdered sugar.

  • Enjoy serving.
