Cream and Chocolate Cheesecake: a no-bake cheesecake and without gelatin.
The Cream and Chocolate Cheesecake is a dessert highly appreciated especially in the summer. In this version, you won’t find any gelatin, so it will be very creamy.
For the base, I did not use the usual butter, but dark chocolate. Please try it, I’m sure it will win you over at the first bite.

Ingredients
For the base
- 2 cups cookies
- 3 oz dark chocolate
- 3 tbsp milk
- 2 tbsp sugar
- 2 tbsp milk
- 1 cup whipping cream
- 1 cup mascarpone
- 1/3 cup chocolate chips
- 1.5 oz dark chocolate
- 1 tbsp milk

- 1 Saucepan
- 1 Bowl
- 1 Parchment paper
- 1 Mold
- 1 Spoon
- 1 Spatula
How to Prepare the Cream and Chocolate Cheesecake
In a saucepan, place the broken dark chocolate and 3 tablespoons of milk. Move to the stove and let the chocolate melt. Once ready, turn off the heat and add the sugar and 2 tablespoons of milk. Mix well.
Take the cookies and crumble them (you can use any cookies you like). To crumble the cookies, you can use a food processor or crush them with a rolling pin. Place the crumbled cookies in a bowl, then add the chocolate. Mix carefully to combine the cookies and chocolate uniformly.
Place the mixture in a 9-inch pan previously lined with parchment paper. Create a base with an even thickness by compacting it with the back of a spoon. Return the mold to the fridge for 30 minutes. Meanwhile, prepare the cream.
Place the dark chocolate and milk in a saucepan. Move to the stove and let the chocolate melt. Set aside.
In a bowl, place the mascarpone and cream. Whip with an electric mixer.
Divide the cream into two equal parts. In one, add the chocolate chips and incorporate them with a spatula.
In the other, add the melted chocolate and gently incorporate it with a spatula.
Retrieve the cake base and first place the chocolate mixture, then the white layer. Level well and return to the fridge for about 3/4 hours.
Before serving, decorate according to your taste. I used chocolate chips.
