  • 2 cups friarielli (already boiled (about 7 oz / 200 g total))
  • 3 oz pancetta (diced)
  • 6 cherry tomatoes
  • 4 oz spreadable fresh cheese ((e.g., Philadelphia))
  • to taste salt

How to prepare creamy orecchiette with friarielli and pancetta

  • Start by putting the diced pancetta in a nonstick skillet without adding any extra fat. Let it fry until golden and crispy.

  • Add the cherry tomatoes (previously washed and torn into pieces) to the pancetta. Let them flavor on high heat, then add 1 cup (about 8 fl oz) of water so they soften. Add about 1 cup (about 3.5 oz / 100 g) of already boiled friarielli, tossing for a few minutes. Season with salt.

  • Meanwhile, take the remaining friarielli and put them in the blender cup. Add the spreadable cheese (like Philadelphia) and a ladle of the pasta cooking water. Blend until you obtain a smooth, velvety cream. Pour the cream into the skillet.

  • Cook the orecchiette and transfer them directly into the sauce, tossing over medium heat to finish. If necessary, add more pasta cooking water.

  • Serve and enjoy.

Storage

It is recommended to eat the dish immediately. If there are leftovers, you can store them in the refrigerator for 1 day in an airtight container and reheat in a pan with a splash of milk or water.
