The white pizza is very simple to prepare, and above all, it is always good. Today I tried the version crispy outside and soft inside.

You can serve it as a bread substitute or stuffed with cold cuts and cheese. It’s perfect as an appetizer, aperitif, or for a buffet dinner.

Ingredients

  • 2 1/3 cups all-purpose flour
  • 2 3/4 cups remilled durum wheat semolina
  • 1 packet dry yeast
  • 4 tbsp extra virgin olive oil
  • 2 tsp salt
  • 1 3/4 cups water
  • 1 tsp sugar

How to Prepare Crispy Outside, Soft Inside White Pizza

  • In a bowl, combine the flour, semolina, dry yeast, and sugar. Mix with a spoon.

  • Add the oil and water. Start mixing with a spoon.

  • When the dough begins to come together, add the salt and start kneading with your hands. You should obtain a soft and slightly sticky dough ball.

  • Place the dough ball in a bowl, cover it with a cloth, and let it rise in the turned-off oven with the light on until it doubles in size. This will take about 2 hours.

  • After the rising time, take the dough and spread it inside a baking tray lined with lightly oiled parchment paper. (If the dough is too sticky, you can oil your hands a bit).

  • Cover the tray and let it rest in the turned-off oven with the light on for about two hours.

  • Before baking, if desired, add some coarse salt and a drizzle of extra virgin olive oil on the focaccia’s surface.

  • Bake in a preheated, static oven at 400°F and let it cook for about 25/30 minutes. Make sure to check the cooking times based on your oven.

  • Remove from the oven, let cool on a rack, and serve.
