Crumble Cake with Greek Yogurt and Mascarpone. A delicious cake, simple and quick to prepare. Perfect for breakfast and snack.
The crumble cake with Greek yogurt and mascarpone is a perfect sweet for any occasion: great for breakfast, snack or as a dessert. Also ideal for parties and buffets.
The filling is fresh and creamy. It is based on Greek yogurt and mascarpone. I used stracciatella Greek yogurt, so it includes chocolate chips. Of course, you can use the yogurt flavor you prefer.
The dough is made in a few minutes, and you can easily knead it by hand.

Ingredients
- 3 eggs
- 5.3 oz butter
- 0.5 cup milk
- 2.8 tsp baking powder
- 6.0 oz sugar
- 22.9 oz all-purpose flour
- 3 tbsp limoncello
- 2.1 oz chocolate chips
- 12.0 oz Greek yogurt (I used stracciatella)
- 4.4 oz mascarpone
- 2 eggs

How to Prepare Crumble Cake with Greek Yogurt and Mascarpone
First, prepare the shortcrust pastry.
In a bowl, add the flour, sugar, and baking powder. Mix with a spoon.
Add the rest of the ingredients (except for the chocolate chips) and knead by hand until you obtain a homogeneous dough ball.
Divide the dough ball into two equal parts. In one part, add and mix in the chocolate chips.
Butter and flour a 12 x 8 inch pan. I used a disposable aluminum pan. If you want to take a look at my pan, click here.
Spread the part of the dough with chocolate chips into the pan.
Meanwhile, prepare the filling. In a bowl, add the Greek yogurt, mascarpone, and eggs. Mix with the spoon until you obtain a smooth and homogeneous cream.
Pour the filling into the pan. Level it.
Cover with the remaining dough, crumbling it with your hands.
Add chocolate chips or shavings on the surface.
Bake in a preheated static oven at 350°F and let cook for about 35/40 minutes. Please check the cooking times based on your oven.
Let the crumble cake cool completely before removing it from the pan. Then store it in the fridge until it’s time to serve. The cake is delicious cold from the fridge.
Before serving, if you like, sprinkle with powdered sugar.
