Ingredients
- 7.8 oz sugar
- 1 cup milk
- 1/2 cup sunflower seed oil
- 2 3/4 cups all-purpose flour
- 1 tbsp baking powder
- 5 oz egg whites (about 4 egg whites)
- 1 pinch salt

How to Prepare the Egg Whites Only Pound Cake
In a bowl, combine sugar, oil, and milk. Mix with a manual whisk.
Add a pinch of salt and mix.
Add the baking powder to the flour and sift everything together.
Add the flour with the baking powder to the liquids a little at a time. Always mix with the manual whisk.
Set aside for a moment.
Beat the chilled egg whites with the mixer. They should not be whipped into stiff peaks but remain soft.
Add the egg whites to the batter a little at a time. Fold them in with a spatula using motions from bottom to top to avoid deflating the mixture.
Butter and flour a 10-inch pound cake mold. At the base of the mold, also put some parchment paper cut to measure.
Pour the batter into the mold.
Grease a spatula with a little oil and draw a line in the batter. This will create the typical crack of the pound cake during baking.
Bake in a preheated, static oven at 350°F for about an hour. Place the mold on the first rack at the bottom of the oven. Always check the baking time based on your oven.
Remove from the oven, let cool slightly, and serve.
Storage
Store the pound cake at room temperature for 3/4 days under a cake dome, so it will remain soft. If you don’t have a cake dome, wrap it in plastic wrap.

What type of oil should be used?
I used sunflower seed oil. You can use any seed oil you prefer. You can also use extra virgin olive oil, but its flavor will be noticeable in the cake.
Is it possible to reduce the amount of sugar?
Yes, you can reduce it to 7 oz. If you want to increase it, you can do so up to 8.8 oz.
