Often for the lunch break sandwiches and mini pizzas bought at the bar are chosen and eaten quickly, so I thought of leaving you a simple and quick recipe to prepare a healthy and tasty ‘schiscetta’ at home.
The farro with peas and sausage is a simple and quick dish to prepare. To prepare it, you will need few ingredients and you can enjoy it hot or cold.

Ingredients
- 3.5 oz frozen peas
- as needed water
- 3 tbsp tomato puree
- 1 sausage
- 2.8 oz farro
- as needed salt
- 1 tsp extra virgin olive oil

Steps
Place the frozen peas inside a small pot. (If you prefer, you can use fresh peas or canned ones). Cover them with water. Add a teaspoon of extra virgin olive oil.
If you like, you can add some slices of onion. Add the tomato puree. Turn on the stove and let it cook on low heat until the sauce thickens.
At the end of the cooking, adjust with salt.
Meanwhile, in a non-stick pan, place a sausage broken into pieces after removing the casing. Let it brown for a few moments.
When the sausage is well browned, add it to the sauce with peas. Mix everything well.
Bring a pot of water to a boil. Once boiling, salt it and add the farro. I use this farro that cooks in 10 minutes. Naturally, you can use the farro you prefer.
When the farro is cooked, drain it and add it to the sauce. Mix everything well.
The ‘schiscetta’ is ready. As I told you, it’s good both hot and cold. Please try it.
