Flourless Ricotta Muffins. Simple and quick treats to prepare: perfect to enjoy at any time of the day.

The flourless ricotta muffins are gluten-free treats that are simple and super quick to make. The ingredients needed to make them are only 5. You just need to mix all the ingredients in a bowl and they will be ready to bake. I baked them in an air fryer, but you can also bake them in an oven.

Ingredients

  • 1 cup ricotta
  • 1 egg
  • 2 tbsp cornstarch
  • 2 tbsp sugar
  • to taste chocolate chips
  • to taste Nutella®

  • 1 Bowl
  • 1 Spoon
  • 2 Teaspoons
  • 4 Muffin Cups

How to make flourless ricotta muffins.

  • In a bowl, combine the ricotta and sugar. Mix with a spoon.

  • Add the egg and mix.

  • Finally, add the cornstarch and chocolate chips. Stir with the spoon.

  • Divide the mixture into muffin cups. I used disposable aluminum cups and placed a paper liner inside each. If you want to take a look at the aluminum cups, you can find them here. If you need paper liners you can find them here.

  • Cook in an air fryer at 340°F for about 14 minutes. (For oven cooking: preheated static oven at 355°F for about 20 minutes). If you want to take a look at my air fryer, you can find it here.

  • Once ready, remove them from the molds and while still warm, add 1/2 teaspoons of Nutella on top.

  • Let them cool down and feel free to serve.
