Ingredients

  • 1 egg
  • 2.1 oz sugar
  • Half lemon juice
  • 1 lemon zest
  • 1 oz potato starch
  • 2 1/4 cups almond flour
  • to taste sugar (for sprinkling)
  • to taste powdered sugar (for finishing)

How to Prepare Gluten-Free Almond Cookies

  • In a bowl, add the egg and sugar. Mix with a fork.

  • Add the zest and juice of half a lemon. Mix with the fork.

  • Add the potato starch and almond flour. Mix with a fork.

  • The mixture is soft and sticky. Let the mixture rest for 30 minutes in the refrigerator.

  • Take small portions of dough using two teaspoons and place them on a baking tray lined with parchment paper. Space the cookies apart.

  • Sprinkle the surface of the cookies with some granulated sugar.

  • Add some powdered sugar as well.

  • Bake in a preheated, static oven at 350 degrees Fahrenheit. Let them bake for about 15 minutes. Make sure to check the baking time based on your oven.

  • Remove from the oven, let cool slightly, and help yourself.
