The strawberry cookies are very easy to prepare. They are perfect for breakfast and snacks. The necessary ingredients are few, and they are perfect for those with intolerances but don’t want to miss out on making homemade treats.

The amount of flour listed among the ingredients can vary depending on the type of flour used, so you’ll need to eyeball it a bit. Below I’ll show you which flour I’m using. I’ve been very satisfied with this flour, both for sweet and savory.

Ingredients

  • 1 egg
  • 2/3 cup sugar
  • 5 strawberries
  • 1 teaspoon baking powder
  • 2 tablespoons limoncello (or lemon juice)
  • 1 3/4 cups flour (gluten-free)
  • 2 tablespoons sunflower oil

How to make gluten-free and dairy-free strawberry cookies

  • In a bowl, combine the egg and sugar. Stir with a spoon.

  • Add the oil and limoncello. Stir with the spoon. (You can substitute limoncello with lemon juice).

  • Add the flour, baking powder, and chopped strawberries. Start kneading with your hands until you obtain a soft but not sticky dough. As I mentioned in the introduction, with the flour, you’ll need to eyeball it a bit, as there are different gluten-free flours, and each behaves differently. I used 1 3/4 cups of this flour.

  • Take small portions of dough and place them on a baking sheet lined with parchment paper.

  • With this amount, I made 8 cookies, but the number varies based on the size.

  • If you like, sprinkle the cookies with granulated sugar; this will form a crispy crust while baking.

  • Bake in a preheated oven, static at 350 degrees Fahrenheit, and let cook for about 15/20 minutes. Please check the baking times based on your oven.

  • Remove from the oven, let cool slightly, and enjoy.
