The gluten-free and lactose-free cookie croissants are simple and quick to prepare. After several experiments, I finally found a gluten-free flour that gives me a lot of satisfaction. In fact, these croissants passed the taste test. Below, I’ll show you which flour it is.

Ingredients
- 1/4 cup sugar
- 1 3/4 cup flour
- 1 container yogurt (lactose-free)
- 1/4 cup sunflower seed oil
- 1 1/2 tsp gluten-free baking powder

- 1 Knife
- 1 Baking tray
- 1 Parchment paper
How to prepare gluten-free and lactose-free cookie croissants
In a bowl, put the yogurt and sugar. Mix well with a fork.
Add the oil and mix it well.
Add the flour and baking powder. Start mixing with the fork, then continue kneading by hand until you get a homogeneous dough. If you want to take a look, I used this mix of gluten-free flours.
Place the dough on a surface floured with gluten-free flour. Roll out the dough with the rolling pin.
After obtaining a circle, cut it with a knife into 8 triangles. (You can choose the size of the triangles to get more or fewer croissants).
Carefully roll each triangle to get the shape of a croissant. The dough will tend to crumble, so you need to be a bit careful. Smaller croissants tend to crumble less than larger ones. So choose the size well.
Place the obtained croissants on a baking tray lined with parchment paper. Bake in a hot, static oven at 350°F and let it cook for about 10/12 minutes. Be sure to check the cooking times according to your oven. The croissants should not darken too much on the surface.
Remove from the oven, let cool slightly, and if you like, dust with powdered sugar.
Serve and enjoy.
