The gluten-free cookies with dark chocolate are very simple to make. Besides being gluten-free they are also lactose-free. To prepare them, I used lactose-free milk, but you can also use another plant-based drink of your choice.
Being gluten-free and lactose-free, they are designed for those who are intolerant, but they are suitable for everyone.

Ingredients
- 1 egg
- 1/4 cup sugar
- 3.5 oz dark chocolate (to melt)
- 2 tbsp lactose-free milk
- 2 tbsp sunflower oil
- 1 tsp gluten-free baking powder
- 2.5 oz dark chocolate (in flakes)
- 3/4 cup rice flour
- 3/4 cup gluten-free potato starch
- to taste sugar (to finish)
- to taste gluten-free powdered sugar (to finish)

How to Make Gluten-Free Cookies with Dark Chocolate
In a bowl, add the egg and sugar. Mix with a spoon.
In a small pot, add the chopped dark chocolate and milk. Move to the stove and melt the chocolate, stirring continuously.
Add the melted chocolate to the dough. Also, add the oil and mix with the spoon.
Add the baking powder, chopped chocolate, rice flour, and potato starch. Mix with the spoon until you get a homogeneous mixture.
Let the mixture rest at room temperature for about 30 minutes.
With the help of a spoon, take small portions of dough and place them on a baking tray lined with parchment paper.
Sprinkle each cookie first with granulated sugar and then with powdered sugar.
Bake in a preheated oven at 355°F (180°C) and cook for about 15 minutes. Please check the cooking times based on your oven.
Remove from the oven, let cool slightly, and serve.
