Ingredients
For the cream
- 1 lemon zest (untreated)
- 1 egg
- 5 oz sugar
- 2 tbsps lemon juice
- 0.85 cups milk
- 4 tbsps all-purpose flour
- 3 eggs
- 4.5 oz sugar
- 2/3 cups sunflower oil
- 2 tbsps lemon juice
- 3.5 oz plain yogurt
- 2.4 cups all-purpose flour
- 1 packet baking powder

- 1 Saucepan
- 1 Hand whisk
- 1 Cling film
- 1 Bowl
- 1 Mixer
- 1 Cake pan
How to Prepare Lemon Cake.
First, prepare the cream. Inside a saucepan, add the grated zest of an untreated lemon, the egg, and the sugar. Mix with a hand whisk.
Add the milk and lemon juice. Mix with the whisk.
Add the flour. Mix with the whisk, being careful not to create lumps.
Move to the stove and let the cream thicken over low heat, stirring continuously.
Once ready, cover the cream with cling film in contact and let it cool.
In the meantime, prepare the cake. Inside a bowl, add the eggs and sugar. Mix with the electric mixer.
Add the sunflower oil, yogurt, and lemon juice. Mix with the electric mixer.
Finally, add the flour and baking powder. Mix with the electric mixer, being careful not to create lumps.
Pour the obtained mixture into a 9.5-inch cake pan previously greased and floured.
Insert the cream into a pastry bag with a plain nozzle and make horizontal stripes on the surface of the cake. Then draw vertical lines. Finally, distribute the cream along the entire circumference of the cake. I use disposable pastry bags. If you want to take a look, you can find them here. Bake in a preheated static oven at 350°F for about 40 minutes. Please check the cooking times based on your oven.
Remove from oven and let the cake cool completely before removing it from the pan.
