Mediterranean Style Chicken Strips in Air Fryer

The Mediterranean style chicken strips are simple and quick to prepare. A last-minute main course.

The chicken strips are perfect for a quick dinner, or as a main course. The preparation is very simple and the necessary ingredients are few.

The chicken chunks will be tender and juicy, and the air cooking will allow you to use very little oil. Naturally, if you don’t have an air fryer you can use the traditional oven, the times will be a bit longer but the dish will be equally good.

Ingredients

  • 10.5 oz chicken breast (in strips)
  • 1 zucchini (large, diced)
  • 10 cherry tomatoes (halved)
  • 1 tbsp extra virgin olive oil
  • 2 tbsp breadcrumbs
  • to taste salt
  • 1 oz green olives (pitted)

  • 1 Bowl
  • 1 Spoon
  • 1 Knife
  • 1 Air fryer

How to prepare Mediterranean style chicken strips in air fryer

  • Place all the ingredients in a bowl. Mix and let rest for about 5 minutes.

  • After the 5 minutes, transfer everything into a 20 cm pan. (Of course, the pan size depends on the size of the air fryer). If you don’t have a pan, you can distribute everything directly on the air fryer basket, or if you prefer, you can use pierced parchment paper.

  • After preheating the air fryer (401°F for 4 minutes), place the pan inside the basket and set it to 383°F for 10 minutes. (Again, you will need to check the times based on your air fryer). My air fryer has a direct current motor that allows faster cooking compared to other fryers. If you want to take a look, you can find it here.

  • Serve and enjoy.

  • If you don’t have an air fryer, distribute the chicken on a baking tray lined with parchment paper and bake in a preheated oven, static mode at 356°F for about 25 minutes. During the last minutes turn on the grill.
