Ingredients
- 6.3 oz pasta
- 2 zucchinis (medium)
- 5.6 oz tuna (or mackerel fillets)
- 1 clove garlic (optional)
- 1 glass water (for cooking the zucchinis)
- to taste extra virgin olive oil
- to taste salt (and pepper)

How to prepare pasta with zucchini cream and tuna
Wash the zucchinis and cut them into small cubes.
In a pan, heat a drizzle of oil and sauté the zucchinis for a moment. Salt to taste and add a glass of water. Cover and cook until they become tender.
Transfer the zucchinis into the immersion blender’s glass and blend until you get a smooth and homogeneous cream.
In the same pan used earlier (no need to wash it), briefly sauté the broken-up tuna or mackerel fillets.
Pour the zucchini cream into the pan with the fish. Mix well and, if the cream is too thick, add a ladle of pasta cooking water.
Drain the pasta al dente directly into the sauce. Sauté over high heat for a minute, adding a little more water if necessary to make it super creamy.
Serve yourself.
Storage
It is recommended to consume it immediately. Alternatively, you can store it in the fridge for a day in an airtight container and heat it in a pan with a little water.
