The Plum Cake with Chocolate Chips and Pistachios is a delicious dessert, simple and quick to prepare. As I mentioned, it’s perfect for breakfast, but you can also serve it as a snack or as a dessert at the end of a meal.

The batter is made with eggs, sugar, oil, milk, flour, potato starch, chocolate chips, and baking powder. The ingredients are mixed in a bowl, and the cake is ready to go into the oven. Once baked, it is decorated with Nutella and pistachio crumbs. Of course, you can also choose not to decorate it or enrich it with the ingredients you prefer.

Ingredients

  • 3 eggs
  • 0.9 cup sugar
  • 0.5 cup sunflower oil
  • 0.65 cup milk
  • 2.4 cups all-purpose flour
  • 0.4 cup potato starch
  • 1 packet baking powder
  • 5.3 oz dark chocolate (chopped)
  • as needed Nutella®
  • as needed pistachio crumbs

How to prepare Plum Cake with Chocolate Chips and Pistachios

  • In a bowl, add the eggs and sugar. Mix with the electric mixer.

  • Add the oil and milk. Mix with the electric mixer.

  • Add the flour, baking powder, and potato starch. Mix with the electric mixer, being careful not to create lumps.

  • Add the chopped chocolate and incorporate it with a spatula.

  • Pour the batter into a previously buttered and floured plum cake pan and bake in a hot, static oven at 356°F. Let it bake for about 35/40 minutes. Please check the baking times according to your oven.

  • Remove from the oven, let cool, and spread Nutella on the surface of the plum cake. Then decorate with pistachio crumbs.

  • Serve and enjoy.
