The poured cake is a simple and quick cake to prepare: it is perfect for breakfast, snack or to serve as a dessert after a meal.

I often make the poured cake, and every time I enjoy changing the filling.

Thanks to the double baking, the filling does not sink to the bottom of the cake but stays in the center. Moreover, it remains soft and creamy.

As you read in the title, for the filling I used mascarpone and jam. I also tried to make it in a version gluten-free and lactose-free. Naturally, you can use the classic ingredients if you do not have intolerance issues.

But let’s see right away how to prepare the poured cake with mascarpone and jam, gluten-free and lactose-free.

Ingredients

For the cake

  • 3 eggs
  • 3/4 cup sugar
  • 2 cups flour (gluten-free)
  • 1/4 cup sunflower oil
  • 1/2 cup lactose-free milk
  • 1 packet baking powder
  • to taste jam
  • 9 oz mascarpone (lactose-free)
  • 1 jar yogurt (lactose-free)
  • 1 3/4 oz dark chocolate (chopped)
  • 1 egg
  • to taste sugar (optional)

  • 1 Pan

How to Prepare Poured Cake with Mascarpone and Jam

  • First, prepare the cake. In a bowl, place the eggs and sugar. Mix with the electric mixer until you get a fluffy and frothy mixture.

  • Add the oil and milk. Mix with the electric mixer.

  • Finally, add the flour and baking powder. Mix with the electric mixer being careful not to create lumps. As for the flour, I used a gluten-free flour mix which I find works well for both sweet and savory. If you want to take a look, you can find it here.

  • Pour half of the obtained mixture into a previously buttered and floured 9.5-inch pan. Bake in a preheated static oven at 356°F. Let cook for about 15 minutes. Please check the baking times based on your oven.

  • In the meantime, prepare the filling. In a bowl, place the mascarpone, yogurt, chopped chocolate, and egg. If desired, you can add sugar according to your taste. Mix with the electric mixer.

  • Remove the cake from the oven. Add a layer of jam and level it. Add the filling and level it. Cover with the remaining batter. Bake again for another 25/30 minutes. Please check the baking times based on your oven by doing the toothpick test.

  • Remove from the oven and let cool slightly. Store the cake in the refrigerator for at least two hours before serving.

  • Before serving, if desired, sprinkle with powdered sugar.
