Since I discovered the poured cake, I fell in love with it. It’s a simple cake to prepare, always turns out well and thanks to the double baking, the filling stays in the center of the cake.
Today I tried the ricotta and chocolate version from Chiara ma non troppo.

Ingredients
For the cake
- 2 eggs
- 1/2 cup sugar
- 1 1/4 cups all-purpose flour
- 1/4 cup sunflower oil
- 1/2 cup milk
- 1 pinch salt
- 1 packet baking powder
- 9 oz ricotta
- 1/2 cup sugar
- 1 egg
- 1/2 cup cornstarch
- 3.5 oz dark chocolate
- to taste Nutella®

How to prepare the cake with ricotta and chocolate chips
Inside a bowl, place the eggs and sugar. Mix with an electric mixer until you get a light and frothy mixture.
Gradually add first the oil and then the milk. Mix everything well.
Add the flour, baking powder, and a pinch of salt to the mixture. Work with the electric mixer.
Butter and flour a 8-inch cake pan. If you prefer, line it with parchment paper.
Pour a little more than half of the mixture into the cake pan and bake in a preheated oven at 350°F. Let it cook for about 20 minutes. In the meantime, prepare the filling.
In a bowl, combine the ricotta, sugar, and eggs. Mix everything with an electric mixer. Add and incorporate the cornstarch. Finally, add the coarsely chopped dark chocolate. Incorporate the chocolate with a spatula.
Remove the cake from the oven and spread a thin layer of Nutella on the surface, then pour the ricotta filling into the pan, leaving the edges free (at least 1 cm).
Pour the remaining batter and level it well. Bake for another 25/30 minutes. Always do the toothpick test to check if it’s done.
Remove from oven, let cool, and store in the refrigerator until serving time.
If you like, sprinkle with powdered sugar before serving.
