Rice with artichokes and mushrooms in oil. A simple and quick first course to prepare. Perfect for a lunch break.
I prepared this dish for my husband who eats at work, so I’m always looking for recipes to prepare a ‘lunchbox’, always different. To make this dish, I used what I had in the fridge, that is, artichokes and mushrooms in oil that I had opened a few days before to top the pizza.
Naturally, with fresh products it’s even better, but sometimes you can’t go out, and so you adapt with the ingredients you have available. Anyway, in my case, it proved to be an excellent fridge-emptying recipe and my husband enjoyed it.
Oh, I forgot it’s great both hot and cold.

Ingredients
- 3 oz rice
- 1.75 oz artichokes in oil
- 1.75 oz mushrooms in oil
- 1.75 oz mixed ground meat
- Half onion
- 1 tbsp extra virgin olive oil
- 1.75 oz tomato sauce
- Half glass water
- to taste salt

- 1 Saucepan
How to prepare rice with mushrooms and artichokes in oil
First, drain the artichokes and mushrooms. Then dry them with paper towels.
Add the oil, thin slices of onion, and ground meat to a frying pan. Let it brown for a moment. Adjust the salt, then add half a glass of water and the tomato sauce.
When the sauce is well reduced, add the artichokes and mushrooms. Let them flavor for a moment then turn off the heat.
Cook the rice according to the package instructions, then drain it into the pan with the sauce. Mix everything well.
The dish is ready.
