How to make ricotta and chocolate cookies without butter
In a bowl, add the egg and sugar. Mix with a spoon. Then add and incorporate the ricotta.
Add the flour and baking powder. Start mixing with the spoon, then when the dough starts to come together add the chocolate chips and oil. Knead by hand until you get a compact and non-sticky dough.
Form a roll and cut it into slices with a knife. I cut it into 8 slices, but you can decide how many to make.
Take a slice and roll it between your hands to form a ball.

Place the cookies on a baking tray lined with parchment paper. Bake in a preheated static oven at 350°F for about 15/20 minutes. Please check the cooking times according to your oven.
Remove from the oven, let cool slightly, and sprinkle with powdered sugar.
