The ricotta and chocolate cookies are easy to make. They are so delicious that you can’t stop at one.

They are made with a kind of shortcrust pastry without butter and filled with a ricotta and chocolate cream.

The preparation is very simple. Just mix eggs, sugar, lemon juice, oil, flour, and baking powder in a bowl. Once you have a homogeneous dough, roll it out with a rolling pin and fill it with a ricotta and chocolate chip cream.

Ingredients

For the pastry

  • 2 eggs
  • 1/2 cup sugar
  • 2 tbsps lemon juice
  • 1/3 cup sunflower oil
  • 2 3/4 cups all-purpose flour
  • 2 3/4 tsps baking powder
  • 9 oz ricotta
  • 4 tsps sugar
  • 1 lemon zest
  • 1 3/4 oz chocolate (shavings or chips)

How to Prepare Ricotta and Chocolate Rolled Cookies

  • First, prepare the filling. In a bowl, combine ricotta, sugar, lemon zest, and chocolate shavings. Mix with a spatula until you get a smooth mixture. Set aside for a moment.

  • In a bowl, combine eggs and sugar. Mix with a fork.

  • Add lemon juice and oil. Mix.

  • Finally, add flour and baking powder. Start mixing with the fork, then when it gets difficult, continue kneading by hand until you get a compact and homogeneous dough.

  • Roll out the dough with a rolling pin on a lightly floured piece of parchment paper. You should form a not too thin rectangle.

  • Spread the ricotta on the dough rectangle using a spoon. Roll up gently.

  • Place the roll on a baking sheet lined with parchment paper and press it slightly with your hands.

  • Bake in a hot, static oven at 356°F and let it cook for about 35 minutes. Make sure to check the cooking times based on your oven.

  • Remove from the oven, let it cool slightly, then cut the cookies.

  • If desired, sprinkle with powdered sugar and enjoy.
