  • 1 sheet puff pastry (rectangular)
  • 3.5 oz bacon (sliced)
  • 3.5 oz cheese (like Emmental, sliced)
  • 7 oz potatoes (boiled)
  • 2 tbsps béchamel sauce
  • 0.7 oz grated Parmesan cheese
  • 0.7 oz milk
  • to taste salt
  • to taste extra virgin olive oil
  • to taste breadcrumbs

How to Prepare the Savory Tart with Potatoes and Bacon

  • Unroll a sheet of rectangular puff pastry and place it on a baking tray lined with parchment paper (you can use the paper that comes with the pastry).

  • Prick the pastry with a fork so that it doesn’t puff up too much during baking.

  • Cover the base of the puff pastry with slices of bacon and spread slices of cheese like Emmental on top.

  • In a bowl, mash the boiled potatoes. Add salt and a drizzle of olive oil. Stir with a spoon.

  • Add the béchamel sauce and Parmesan cheese. Mix well.

  • Add the milk and continue mixing until you get a creamy and homogeneous mixture.

  • Evenly spread the potato mixture over the puff pastry, leveling it well with a spoon.

  • Fold the edges of the puff pastry inward to close the tart. Sprinkle the surface with breadcrumbs and add a drizzle of olive oil for a perfect golden crust.

  • Bake in a preheated oven at 356°F (static mode) for about 30 minutes or until the puff pastry is golden and crisp.

  • Remove from the oven, let it cool down a bit, then cut into slices and serve.
